This latest Brew Ridge Trail Collaboration Beer is the first of this series created at South Street Brewery, and it completes the cycle of all six breweries on the trail having hosted the collaboration brew. For such a momentous event, we chose one of the biggest beer styles out there, the Belgian Quad. Local honey, Belgian candi sugar, dark malts, Slovenian hops, star anise, orange peel. Rochefort Trappist monastery brewery yeast fermented this heady ale, lending deep, naturally spicy Belgian flavors.

Keg at South Street, 3/19/16. Clear dark red-amber, large creamy off-white head, good retention. Aroma of toffee, anise, cherries, spice, yeast, candi sugar, banana. The taste is toffee, cherries, anise, yeast, spice, honey apples. Medium-full bodied, mild booze.

Plum, raisin nose. Clear garnet, medium tan head, good lacing. Plum, cherry, boysenberry. Full body, soft carbonation, very sweet, warm. Really nice, authentic.

Draft pour at Rustico. Poured a clear, dark ruby color with a small off-white head. Wow. Boozy sweetness initially. Alcohol isn’t as present in the flavor. Lots of malty sweetness here. Caramel, very light toffee. There might be a few too many cooks in this one, but the broth has not been spoiled.
