Monks Mead is a dry mead with a hint of honey flavor, gently carbonated and crisp. It’s dangerously easy to imbibe despite being 11.9% abv. Monks Mead is made from wildflower honey and water and naturally fermented with a champagne yeast.

Draft pour (yep, draft) at Savannah Bee Co. in Charleston SC. Poured a clear pale golden yellow color. Very traditional tasting with a little carbonation. Interesting addition to the mouthfeel brings out some additional light sweet honey notes. Little bit of floral notes in this one with a lightly herbal finish.

[9/23/2013] Sample at J.U.G.S. Light, bubbly gold, with a minimal, white head. The aroma is light wheat, honey, lavender, and light caramel. The flavor is very sweet. Surprisingly light body, high carbonation, and lightly acidic. Overall, this is a delicious, champagne-like beer.
[11/7/2015] Sampled at the Decatur Wine Festival. Flavor is considerably dryer than I recall. The yeast character is reminiscent of a Tripel, or a witbier. Not as crisp as I remembered, but much heavier and creamier.

On tap. Pours a clear pale yellow with a white head that starts and remains at the edges. Aroma has sweet honey with a hint of apple/sweet light fruit backed by a bit of champagne dryness. Flavor begins sweet with honey and a hint of light sweet fruit but the finish adds a dry champagne note.
