This is our take on a classic style, the Belgian Tripel. We’ve kept the recipe simple and true to style to not overwhelm the complex flavors imparted by our Belgian trappist ale yeast strain, which is sourced from a Belgian monastery. We brew this beer to finish lower in gravity, which allows for a drier finish. We also add real coriander, crushed the day of brew, adding citrus spice notes to round out the light clove and bubble gum notes imparted by the yeast.

good solid tripel, but in a style that produces some of the highest rated beers in the world, this is up against some tough competition. a little sugary for my taste, a little too sweet. good carbonation, but a little "loose" rather than the belgian tight bubbles. easy to drink, but noticeably lesser in quality than a belgian.

Bottle from Oak Tree. Pours hazy orange gold with a foamy off-white head. Aroma is rather perfumey citrus/fruit. Full bodied; foamy carb. Flavor is malty, yeast/spice and some lighter stone fruit. It’s on the sweet side, but not objectionably so. Big and rich it is. Very enjoyable.

Spicy yeasty aroma with some sweet notes, too. Spicy, cloves, yeast, and some sweet sugars and malts, too. A nice bite of yeast on the finish. Pretty decent beer. Doesn’t feel 10%, either.

12 ounce bottle from Vintage Cellar in Blacksburg, VA, purchased March 2009 and opened May 5, 2010. Pours a hazy orange color with a large head. Good head retention and lacing. Aroma of bread, caramel, candi sugar, honey, toffee, toasted coconut, butterscotch, brown sugar, faint fruity notes. The taste is honey, leafy hops, candi sugar, bread and some dry fruity notes, including pear and pineapple. Medium bodied. This is a nice beer and it has borne its age very well.

Tap at Peculier Pub. A solid Tripel. Pours a cloudy yellow-gold with a medium, fluffy white head. Nice aroma, with spices, phenols, wheat and yeast. Flavor is lightly sweet up front with faint malts, then spicy with Belgian character and mild hops on the tail. Medium in body with average carbonation. Alcohol is not too overbearing but does add some intensity to the flavor and overall experience. Good stuff.

Bottle thanks to blutt59. Pours with a huge tan head with good lace. Golden body underneath. Aroma of flowers, dryness and honey. Taste is candi, and way too sweet for a triple. Light bubbles and somewhat syrupy mouthfeel. Under attenuated!
