This is our take on a classic style, the Belgian Tripel. We’ve kept the recipe simple and true to style to not overwhelm the complex flavors imparted by our Belgian trappist ale yeast strain, which is sourced from a Belgian monastery. We brew this beer to finish lower in gravity, which allows for a drier finish. We also add real coriander, crushed the day of brew, adding citrus spice notes to round out the light clove and bubble gum notes imparted by the yeast.

Bottle. Hazy golden yellow color, tiny white head. Aroma of peppery straw. taste is sweet, boozy caramel with a bitter finish.

Bottle from New Beer Distributors, NYC, August 2012. Hazy orange with a medium white head. The aroma was quite typical "Belgian" with yeast, malt, alcohol, fruit and spices. The same in the taste, also notes of "rubber". Not bad but not that exciting either.

Received in trade from mdaschaf, thanks for the opportunity. Pours a slightly hazy deep golden color with a huge fluffy bone white head that sticks around forever. Smells floral with malty caramel and twinges of pomme fruit. Yeasty esters abound reminding us of its pedigree. Taste is malty sweet with caramel and light green apples. An abundance of ethanol or higher alcohol meld with spicy phenols in a long sweet finish. Medium body with a spirited level of carbonation and a sweet almost sugary mouthfeel. Decent flavorful tripel, but a bit rough with alcohol burn.

Bottle sample at a tasting at Dancing Camel. Thanks David Cohen. Clear golden. Aroma of apricot, peach, other fruits, light spicy notes and some alcohol. Very sweet spicy flavor with fruits, a bit of malt and quite a bit of alcohol. Medium-bodied. Not great.

Bottle 12fl.oz.Clear medium orange yellow colour with a average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, riped fruit, alcohol, light licorice. Flavour is moderate sweet and bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20111105]

Bottle @ Ulfborg, Early Winter Tasting, 2011. Pours cloudy orange with a small creamy head and lacings. Sweet vanilla, yeast, orange and grain. Boozy and warm.

Bottle. An unclear, golden-orange beer topped by a very small, off-white head. It’s quite intense on the nose, with lemon peel, white sugar, some spicyness and a touch of alcohol. The flavor is mostly sweet, with citrus peel like bitterness and some spicyness. Quite fruity flavor too, with a syrupy fruity finish. Medium body, a bit low on carbonation. Well, too sweet for my likings, but hides the alcohol very nice. 111105
