This is our take on a classic style, the Belgian Tripel. We’ve kept the recipe simple and true to style to not overwhelm the complex flavors imparted by our Belgian trappist ale yeast strain, which is sourced from a Belgian monastery. We brew this beer to finish lower in gravity, which allows for a drier finish. We also add real coriander, crushed the day of brew, adding citrus spice notes to round out the light clove and bubble gum notes imparted by the yeast.

Bottle from jtclockwork, many thanks James. Orange yellow color with thick white head. Aroma of sweet malt, candies, Belgian yeast. Very sweet taste with candies, Belgian yest, caramel, alcohol. Typical Belgian, although it’s from US. Too sweet for me, being really enjoyable, but overall OK.

I believe this is my last one from my sister.
This was poured into a chalice.
The appearance was a nice typical hazy orange bronzed over yellow color with a closer to thin finger-ed white foamy head that dissipated within less than forty seconds. The lacing was there and kinda all over the place.
The smell had that \"iced apple\" aroma I almost always smell in Tripels with a nice light spicy clove-like characteristics showcasing themselves inside of a bready yeastiness.
The taste was exactly the same. There really wasn’t much difference from the smell.
On the palate, this one sat right at a medium with what wanted to be somewhat sessionable, but I found myself sipping this for the most part. The carbonation was slightly there, but I figured, it didn’t have to be since there was a fair amount going on that would keep things together.
Overall, in my opinion, this was a good Tripel that I would have again.

12 ounce bottle. Cloudy gold color topped by a small creamy white head. Slightly yeasty, citrus malt nose. Hints of wet cardboard. Sweet citrus malt upfront. Notes of yeast, vanilla and lemon peel. Earthy malt with some residual sweetness. The 10% ABV is barely noticeable. This is nice, but lacks the complex spiciness I expect from this style.

Bottle thanks to Blipp. Pours a clear hazy gold with a white head that dissipates to the edges. Aroma has a good amount of earthy grains and rich sweetness with a hint of dry honey. Flavor is similar with earthy grains that have a good amount of sweetness and a touch of dryness.

Keg at the Blind Tiger, NYC, 25/11/13. Hazed orange with a moderate off white covering. Nose is dark fruits, sugar, dates, yeast notes, lemon rind, fruit cake mix. Taste comprises cake mix, dark fruits, yeast esters, citric punch, sweet notes. Medium bodied with bite, fine carbonation, sweet finale with lightly warming booze. Decent enough tripel, good balance, holds some flavour and not overly sweet or boozey.

Clear golden color, small white head. Sweet apple, candy-marmalade aroma. Medium-bodied. Tastes like an apple cider. Alcohol, light fruity yeastyness. Doesn’t taste like 10% at all, strange.

Pours clear golden with a medium sized white head and good lacing. Aroma of Belgian yeast, banana, sweet malts and spices. Flavors are yeasty, grainy, sweet malts, lemon bitterness with a dry finish
Not one of my favorite styles, this was real good. Sweet but off set by the spices.

12 oz. bottle from a trade with a Utappd buddy. Aroma is biscuit malt with fruity esters and candi sugar. Flavor is heavy yeast fruity esters with plenty of candi sugar with a dry finish. Honey notes. Medium body and moderate carbonation. The10 % ABV is well hidden well yet as a nice warming after the sip. Lingering yeast phenols. Nice sipper.

Tap at draught 55 as I attempted to get drunk enough to go to bed early to catch early flight, great logic. Pours golden with fluffy head. Nose if yeasty and sweet. Tastes of vanilla, lots of banana, yeasty, some earthy hops. Touch harsh on palate and warming finish.

On tap pint in Alfie’s, 9th Ave, New York on 18 Jan 2013. First three words on my notes: Bubble-gum, cloudy and sweet. That kind of sums up the brew nicely. Luckily I like sweet brews normally, this one however caught me out somewhat. If this is supposed to be in a Belgian Tripel style they’ve gone wrong completely: as a stand alone brew however it was fine, not really to my liking but there is nothing bad or poor about it. The alcohol is well hidden by the vanilla/bubble-gum flavours and I managed to finish my pint without any undue problem, but I’ll never have another.
