At rest for 6 months in Coppercraft bourbon barrels, LAY THIS BODY DOWN was designed to explore notes of rich chocolate that developed in the base during aging. Our pursuit was to capture a cross between melted mocha ice cream and undercooked fudge brownies.
We conditioned everything on a reserved amount of freshly-roasted El Castellon Gesha coffee beans from our friends at Greenglass Coffee Co. to further enrich the chocolate with hints of sweet espresso. We also used very subtle amounts of toasted coconut and maple syrup that played nicely off of the creamy cocoa viscosity. None of the adjuncts were used to dictate or command the final profile, but instead to compliment the desired outcome.

2023 bottle thanks to Brian. Pours a dark brown with small beige head that lasts. The aroma is strong roast, cocoa, green pepper, booze. Slick body, roasted malt, dark chocolate, coconut, boozy finish, very good.
