We never pass up the opportunity to feature coffee from our Chicago friends at Dark Matter. This time, we created a sour base to complement an experimental batch of their Catuai coffee fermented with Oenococcus oneii bacteria traditionally used in red wine production.

Draft pour at Lost Dog - North Arlington. Poured a very lightly hazy yellow color with a small off-white head. Aroma was very light coffee, some very light tartness. Flavor was mellow, light tartness, touch of very light green coffee and a tinge of chocolate.

Sampled from the tap at Barleypop. Pours a hazy orange with a gold hue and a white head that dissipates to the edges. Aroma is full of coffee with some sweet grains underlying. Flavor has grains and lots of coffee with a bit of light tart fruits.
