In December 2022, we collaborated on a recipe with our long-time friend and colleague Vasili Gletsos of Wunderkammer Biermanufaktur, located in Albany, Vermont. The purpose of the collaboration was to brew a beer that could be enjoyed by the fireside during the depths of winter. A Baltic porter.
A fraction of this collaborative effort was afforded the opportunity to spend nearly twelve months in 7-year charred-oak rye barrels from one of the finest producers in Kentucky. Under our watchful eye, we carefully monitored the developmental arc of this beer...As the dusk of winter begins to fall, Rye Barrel Aged Athene Noctua is ready to spread its contemplative wings.

On tap at Tørst. Pours black. Liquorice, ash, orange peel, earthy, whisky, strong whisky, biscuit, burnt s’mores, hefty booze, hefty malt, all round heft. Oily body. Bit much.
