FIRST is a particularly special single barrel that our team highlighted as having both exceptional fermentation and barrel qualities that will age for years to come. ⁣ ⁣ This beer comes from the last batch of the 19|20 brewing season. This recipe pushes the level of unmalted wheat to 50% coupled with a higher hopping rate and longer boil.⁣ ⁣ FIRST spontaneously fermented and aged for two seasons exclusively in a single Calvados pipe that was previously used for many decades to age French apple brandy.⁣ ⁣ We packaged this beer without the use of a simple sugars but instead conditioned it exclusively with a small addition of young spontaneously fermenting beer. ⁣ ⁣ We believe that these painstaking processes will lend an incredible age ability to this beer, allowing it to develop gracefully for many anniversaries to come.⁣ ⁣ FIRST pours with champagne-like carbonation and well-integrated CO2 that builds a beautiful foam.
