In creating Chekhov's Gun, we brewed a Quadruple Ale in mid-spring and fermented it using Lallemand's Abbaye Ale yeast. The additional fermentables needed to reach our target ABV of 15% were achieved with the addition of Pomegranate Molasses during the boil. After a little over 2 weeks of primary fermentation, the beer was racked into 4 Peach Brandy barrels. After continuously tasting each for almost 8 months, the maturation of two of the barrels blended at the ratios below yielded the balance we were seeking. Drink Chekhov's Gun because everything here has a purpose.

Draft, small pour, at Carton, 1/16/23. Clear dark reddish-amber. Dark fruit sweetness. Touch of stone fruit. Lots going on here. Drinks rather boozy. Solid.
