Earlier this year, on what turned out to be our 100th brew and amazingly enough, Maria’s birthday, Jose joined us to brew a Saison using Rabbit Hill malt that was aged for 8 months in Chardonnay barrels and then aged for another month on organic peaches. Finally, it was bottle-conditioned using honey from my family’s farm, Homelands Farm in Colts Neck, NJ. The idea of this beautiful beer was thought of by Jose with the intention to be very delicate with subtle notes of peach, honey and a little bit of funk picked up from the fresh peaches. The end result is a wine-forward Saison with notes of wild Brett and stone fruit. Thus, “Elena” (named after Jose’s mom).

500 ml bottle from AE, 12/11/22. Bright and clear gold in color with a thin, fizzy white head. Soft stone fruit and yeast aroma. Light pepper, clove, earth, and wood. Floral honey sweetness toward the conclusion. Drinks very clean. Nice flavor profile. Good balance between the underlying Saison and the honey + peach adjuncts. Exceptional mouthfeel. Tasty beer.
