You ever ask someone to do something and they look back at you like you are either crazy or just an as*hole? Well, when I asked our Head Brewer Brendan to do a triple decoction for our anniversary lager, he looked at me just like that.
This triple decocted Czech Pils that had the most intense bar graph for a mash schedule that we’ve ever seen started in the kettle, then we transferred 2/3s at a precise temp to the mash tun, boiled the ⅓ left behind, sent it back to mash to bring up to second precise temp for rest, brought ⅓ back to the kettle, boiled again, sent it back again for second rest at new precise temp, brought back ⅓ again, boiled and sent back over for final rest and temp. So many variables, but we nailed it!
We then left the dry-hop port off the fermentor so it could “replicate” the old Pilsner Urquell process of open fermentation. And like most of our lagers, we gave it 8 weeks to do its thing. The result was beautiful, and it won’t be done again until Anniversary Number 2, so be sure to get your 6-pack now!

12 oz can from AE, as part of the 1st Anniversary release, 10/29/21. Pours a clear gold with a white head. Bright, grassy and grainy. Has some lovely spice, dough, and lemon zest. Crisp, clean. Tingly, almost peppery close. Crushable and flavorful, what else could you need?
