Our Imperial Stout aged for two months in stainless, three months in a Makers Mark barrel, then for seven more months in stainless.
2007: Aged in an Old Elijah barrel.

Served on nitro at the brewpub. Appears black in the glass, though the lighting sucks so take that with a grain of salt. Creamy tan head. Good head retention and lacing. Aroma of bourbon, oak, light fruity notes and light roasted malts with a bit of chocolate. Taste is bourbon, oak, light roasted malts, spicy hops. Smooth, creamy, full bodied. Nice effort.

On tap at the brewery 3-9-07. Pours thick and BLACK, small head, with hints of a deep red around the edges. Aromas of chocolate malts, vanilla, sweet alcohol, raisins, and caramel. Lovely sweet chocolate-covered-cherry like liquor, without being sickly sweet. Hints of vanilla and oak, definite bourbon taste- without being too strong or pronounced. Outstanding beer. Too bad it’s not a part of their regular rotation.
