Salvador Cybies is our “Crooked Stave” take on a Dark Belgian Strong brewed in hommage of my Siberian Husky that I had through my 20’s. A dear member of my family and our early brewing team, Cybies had many nicknames. Salvador Cybies being one of them, this version was aged in well used Leopold Brothers American Small Batch Whiskey barrels with Sour Cherries harvested from the Colorado western slope. Like man’s favorite companion, this beer is worth snuggling up to, maybe with the fire place lit and relaxing after a great day.

6 oz pour on draft at Snallygaster 2017 shared. Brownish color. Aromas of vinegar, light smoke. Tastes of vinegar, dark fruit, tart notes. Light body with a dry finish.

Plum, a lot of sour lime. A little sour but otherwise very nice drinking. Crooked Stave is good when their instinct to make mouth puckering beers is controlled like Kendrick. Tap at Snally.

Clear, auburn-amber with light mahogany hues throughout. Beige head atop recedes quickly to ring.
Strong alcohol mixes with very aggressive malic acid as strong oak quickly adds to the mess, as well. Some strong bread undertones from the malt, but little to no softness or balance to be found. Acetic acid and overworked Brett notes linger...
Sour, bordering vinegar-like with overdone oak contributing pineapple and light coconut, as spicy, sharp whiskey and alcohol cut through the already rather thin texture. Low carbonation, rather loose and watery, with heavy malic and acetic acid lingering. A dearth of maltiness that this beer badly needs for balance/texture, sharp acidity and heavy "bread"-like character. A disgusting mess and hard to drink more than a sip.

F: big, pale brownish, good retention. C: dark brown, opaque. A: bit malty, woody, caramel, chocolate, bit brett, vinous, T: sour, woody, fruity, vinous, cherries, chocolate, good balanced, enjoyed, medium to full body, medium carbonation, 2016 version, sample @ BXLBeerFest in Brussels.

@ BXLfest 2017. Ambrée sur léger trouble, col fin beige crémeux. Arôme au bouquet malté, caramel, fruité noir et des relents de brett et fine aigreur. Palais est malté caramel, pâle avec un caractère rappelant une vieille brune, léger barrique, vin rouge et cerises pressées. Retrouve un effet funk/brett typique de Crooked Stave, usage et mélange avec la barrique est plus que correct.

Thank you for sharing RB crew! Sampled draft @ BXLBeerFest 2017. Dark reddish brown, little tanned head. Nose is massively sour like the other Crooked Stave beers tried, red cherry & oak. Taste is acidic vinegar sour cherry, all puckering great cherry pits & oak character. Pure acidity body. Another lovely Crooked Stave beer that is ridiculously sour.

Pretty clear red brown to purple beer, small creamy beige head, unstable, bit adhesive. Aroma: bit sweet, caramel, some dried fruits, soft roast, some butter scotch. MF: ok carbon, medium body. Taste: very fruity start, somewhat funky, sourish, lemon juice, very acidic. Aftertaste: mouth puckering dryness, lemon juice, little fruity, some tannins.

Bxlbeerfest. Pours brownish. Aroma is sour, vanilla, vinous, oaky. Flavor is sour, acidic, oak. Finish is acidic. Overall: okish, quite harsh acidity.
