Salvador Cybies is our “Crooked Stave” take on a Dark Belgian Strong brewed in hommage of my Siberian Husky that I had through my 20’s. A dear member of my family and our early brewing team, Cybies had many nicknames. Salvador Cybies being one of them, this version was aged in well used Leopold Brothers American Small Batch Whiskey barrels with Sour Cherries harvested from the Colorado western slope. Like man’s favorite companion, this beer is worth snuggling up to, maybe with the fire place lit and relaxing after a great day.

8 3 8 3 15 Draft at BXL Beer Fest, Brussels ’17. Brown with a tan head. Aroma of caramel, tart overripe dark fruits, light herbs, light funk, malt and gravy. Flavour is above moderate sweet and sour. Above medium bodied with soft carbonation.

On tap at Crooked Stave, pours a deep dark mahogany with a small tan head. Aroma brings out heavy oak barrel presence, burnt brown sugar and dark cherries. Flavour is impeccably complex, with a wonderful blend of burnt brown sugar, dark cherries, and oak barrels. Light tartness from the cherries melds well with this. Great use of oak and the cherries are wonderfully situated. Excellent.

Nice fizzy-creamy mediumlasting head. Aroma is slightly dry sour-ish fruity, dried sour cherries, mild vinegar, grass, oak, minerals, cherry stones, soda powder, bark, citrus acid. Taste is dry sour-ish fruity, sorrel, soda powder, sour cherries, berry skin, mild vinegar, cherry stones, grass, citrus acid, hay. Medium bitterness, dry sour-ish mouthfeel. Nice.

Sample from bottle at Bob’s Bar during the "Crooked Stave Hits Ohio!!!" event on 02/13/2017. Cloudy ruby-brown color with a medium off-white head that diminishes steadily to an outer ring. Strings of lacing on the glass. Aroma of tart cherry, yeast and malt. Medium to full body with flavors of sour cherry, floral yeast and doughy malt. The finish is tart with a cherry aftertaste. Good beer all around.

[ As Crooked Stave Salvador Cybies ].Unclear - hazy medium brown - red amber color with a average to large, frothy, good lacing, mostly lasting, off-white to light light beige head. Aroma is moderate malty, dark malt, tart, moderate yeasty, barnyard, leather, belgium yeast, cherry, wood, oak. Flavor is moderate sweet and acidic with a long duration, tart, berries, wood, cherry, super dry, belgium yeast, oak. Body is medium, texture is oily to watery, carbonation is soft. Draft @ CBC 2016. Pours a dark amber color with a small off-white head. Has a fruity sour tart spicy aroma with hints of cherries. Fruity sour tart acidic flavor with hints of caramel. Has a fruity sour tart spicy finish with hints of cherry.

(375ml bottle from kihoskh.dk) Pours dark reddish brown with a small off white head that fades with spotty lace. Aroma of sour cherry pits and flesh, light caramel malt core, heavy wet oak, cherry liqueur, a bit of funk and spice drifting over top. Flavour is lean sour cherry juice, quite sour really, light acetic acid, oaky tannins and light spice. Rather light body feels thin because of the acidity, soft carb. Nose has some development but the flavour ends up being basically one note cherry. Not bad but a bit of a miss, especially at the price point.
