Hazy yellow-orange body, thin off-white head. Tangy, fruity aroma of white grape, pear juice, crackers, pepper, and coriander. Pear juice, orange, cracker, and yeasty flavor, finishing with coriander. Thin and rather tart. A bit thinner than most Tripels or Tripel-wannabes, but the components are here (tart citrus and bitter/earthy spices). Mostly just comes across as thin and acidic, unfortunately.

2004 draught at Redbones. Copper golden color, slight slight haze to it with a very small white head. Aroma of spearmint, hay, light bubble gum esters and sugar. Flavor is sweet at first, with candi sugar and yeast mixed together. Finish has a dry/bitter almost medicinal bite to it that I cant place. Almost tastes herbal, but it could be some old dried hops used in brewing. Very astringent and bitter at the very end. A bit too sweet through the middle.

Clear golden color with a frothy white head. Spicy Belgian aroma. The flavor is spicy, slightly sweet with a musty dry touch in the finish.

Bottled. This is from when the Celi's brand was owned by Michigan Brewing. MBC's taproom a stop on any journey through Michigan. When they spotted me taking notes on the beer, the staff just kept bringing out more, including this one in a bottle since they had no more on tap. Anyway, they told me Peter Celis, who is no longer involved in the US operation, did drop by recently and said it was the best beer he'd ever had. Definite complex Belgian body, with Cinnamon taste, coriander and grains of paradise. But it's also lighter on the malt than a dubbel. Slightly citrusy and tangy bitterness. Makes friends out of enemies.

How sad this brewery is gone. This was a strong beer and one of the first Belgian style ales I had tried. It took me awhile to get used to it: strong, sweetish, strange yeast notes (spice, bubble gum), and citrus. Still - integration was masterful.
