Solstice is a Virginia ice cider made from 100% Goldrush apples. The juice is cryoconcentated prior to fermentation. After primary fermentation in neutral oak, the cider is racked and barrel aged for 12 months. Solstice is bottled still and has no residual sugar. Expect notes of caramelized apples, spicy oak and clove. Solstice can be sipped fireside as a digestif or enjoyed in a cocktail.

Tap at the downtown tasting room. Thanks drake! Pours gold. Sweet apple, boozy aroma. Flavor is boozy apple, vanilla, rather, oak. GNG.

Bottled sample at the cidery. Clear copper. Aroma of sweet apple, vanilla, sharp tart apple, booze. Taste is tart apple, brown sugar, vanilla, booze. Medium bodied, hot. Could probably benefit from some aging.
