Wood adds marvelous character to beer. We begin with out rustic grisette-style Saison. Aged over 10 month in French Oak, the beer draws notes of warm spice and subtle sweetness from the barrels. Our house blend of Brettanomyces develops funky overtones, and 100 ponds of local raspberries impart a delicate fruity tartness and beautiful blush color. The result is Raspberry Wood Song, the first in out series of odes to barrel-aged beer.
