This 6.2% IPA was designed to be an easy, breezy quencher for landings in the summer. It was brewed entirely with Thomas Fawcett English Pearl Malt. It was hopped solely with Azacca, a Pacific Northwest varietal we dig for its big swirl of tropical fruit and citrus character. And it was fermented with our House Ale #3.

The name nods to a tune from Wilco’s classic 1995 debut A.M. One of our favorite songs, ”It’s Just That Simple” was written by multi-instrumentalist John Stirratt — a kind soul we’ve had the pleasure of corresponding with since their last tour visit.
This beer is for John and the rest of Wilco. Thanks for the music.

Pint can from Beer Run, 8/2/22. Pours nearly all head. Eventually a pale gold color, hazy. Aroma of floral, leafy hops, citrus, kind of a citrus perfumey note. Taste is grapefruit, lemon, mango, pale malt. Mild bitterness. Tasty.
