One Day is a 6.2% saison brewed in collaboration with Canadian hardcore legends Fucked Up. Our farmhouse-inspired ale shares its name with the band’s sixth LP, out now on Merge Records.

Each member of Fucked Up wrote and recorded their contributions to “One Day” in 24 hours. The album asks, “What would you do if given just one day?” We think Fucked Up made their most dynamic, diverse, melodic album. We, meanwhile, made a saison.

Like its stylistic progenitors, One Day begins with a multigrain grist: Pilsen, Vienna, and Munich malts combined with wheat, oats, and triticale. These regional grains were malted and kilned by Epiphany craft malt – located, like Merge, in Durham, NC. During the boil, we added German Tettnanger hops, imbuing earthy and herbaceous notes. Then, at whirlpool, we introduced Amarillo, a modern PNW cultivar prized for its orange blossom character. Finally, we pitched two expressive yeasts — one Belgian, one French.

The resulting saison radiates a deep golden hue. It possesses a soft, silky body with rustic complexity. The swirl of new and old world hop character is assertive but balanced. Lemony, strawberry esters shine alongside subtle clove and peppercorn phenols. Despite everything under the surface, One Day finishes dry and quenching. It’s the perfect accompaniment to an album that is simultaneously dense and intricate yet beckoning and instantly endearing.

“The record is made of a number of interlocking, complex yet complementary parts that form a substantial whole,” drummer and resident beer savant Jonah Falco told us. “There’s so much going on. We wanted to positively complicate things.”

He calls the LP “chamber hardcore.” Together, we sought to make a chamber saison. A positively complicated ale.

Pint can from Beer Run, 5/12/23. Hazy orange, large tan head, good retention. Aroma of lemon, orange, bready malt, yeast. Taste is yeast, citrus, bready malt, caramel, spice. Crisp, well balanced. Nice beer.

Pleasant saison. Citrus and a little hay. Hazy golden orange pour without a ton of head. Light tart finish. Tap at Dominion.
