A collaborative Foeder fermented Black Farmhouse Ale, Lachesis was brewed with Maine-grown Pale Malts, Oats, and Wheat and a touch of Black Malt. We fermented Lachesis with our house blend of S. diastaticus and Brettanomyces cultures, prior to being dry hopped for an alloted time on loads of Hallertau Blanc, Citra, and Mosaic hops, just before bottle re-fermentation.

330mL bottle, pours a deep dark amber brown with a huge beige head. Nose has a wonderful leathery character, earthy saison yeast, and light bugginess. Flavour is much the same, with burnt malts, leather, saison yeast, and some bugs. Dark saisons/table beers are a hard thing to do, but they nailed this. Very good yeast profile and dark malts combine well. Great.

Bottle purchased from brewery in spring of 2025: pours dark brown with a beige head. Aroma is lightly earthy from the brett, light funkiness, slight toasty malts. Light body. Slightly bitter brett. Quite dry. Nice complexity. Very pleasant.

Bottle from Wagner Market, 5/20/24. Very dark brown, medium tan head, average retention. Aroma of tart leather, olive juice, dark malts. Taste is roast, olive, leather, funk. Weird in a good way. High carb, well balanced. Defintely an odd duck, but nice.
