A true meeting of the minds for this one! Brewed with heirloom Pilsner malt and a variety of hops and hop products, this beer was fermented with Ardent's house lager yeast and then transferred to an oak foeder for two months before moving back into a stainless steel tank for a dry hop and cold maturation. Both teams wanted to test out some new hop products, including American Noble hops, Citra and Simcoe, plus Cascade, Centennial, and Simcoe hop extracts. These really emphasize hop character without making the beer too bitter. Right out of the foeder, this beer smelled like Sauvignon Blanc with subtle Pilsner malt flavor. We leaned into the Sav Blanc character and dry hopped it with New Zealand hops, Nelson Sauvin and Motueka, to impart notes of white grape, lemon, and lime, which pair well with the very subtle oak character and underlying floral citrus character from the other hops—overall making for a flavorful yet balanced beer with a pleasant dry finish.

Keg at Starr Hill Dairy Market with hershiser2, 4/7/24 Clear gold, thin white head, average retention. Aroma of earth, lime, mint, ginger ale. Taste is lemon, grapefruit, pale malt. A bit slick. Well balanced.
