We have brought wine and beer together!

We love wild yeasts and ingredients at the Wild Beer Co and frequently use locally foraged ingredients. We decided to team up with a nearby wine producer to create a beer with incredible locality and a truely wild character.

Grape must is discarded as a waste product at vinyards, only the juice is kept. However, this is where all the natural, wild yeasts are and we wanted to harness these unique bugs to sour bring them to beer. We used white grapes at the beggining of the fermentation to add sourness and then red grapes in the conditioning to add extra flavour and funk.

Using our proprietary Somerset yeast, captured in local cider orchards, and harnessing the wild yeasts and bacteria from English grapes, this beer's favour is rooted in its locallity.

With an assertive acidity, complex funk and bright pink colour, it's as unusual as it is delicious and in limited numbers - so get yours fast!

Bottle at BBT 6/2023. Amber color with white head. Aroma of grape, funk, red currant, wood. Taste is pleasantly sour with some funk, wood, light vanilla. Nice one.

Bottle at BBT 6/2023. Rather thin body, medium carbonation. Med-high sourness, seems to be a nice mix of a bit of acetic and a bigger chunk of lacto and bretty goodness. Lots of funk to go around, rather barnyardy, horse blanket, hay, with rather less fruity impression. The grapes did not exactly impart a big grapeiness, rather the funk. Overall well balanced, rather subtle mix of flavours. I really like this. Quite good.

Bottle at BBT. Funky sour aroma and taste, wine notes, vinegar, medium sour. Medium body, funky wild sour finish. Ok.

Hazy yellow. Pretty high carbonation, smells funky, wood, tart, sourness. Body is decent, right amount of carbonation for the lightness. Taste is sour but not really sharp, fruityness is grape galore, hints of peachyness. Nicely refreshing.

750ml bottle split. Pours opaque gold with a slim white head. Aroma: sharp, acetic, funky. Taste: light acetic, funk, vinous, dry grape must, light fruity sweetness. Medium body with light carbonation.

Draft. An amber beer with a thin beige head. The aroma has notes of funk, grapes, and malt. The flavor is sour with notes of lemons, funk, wood, grapes, and malt, leading to a tart finish.

75cl bottle @ monthly tasting, Chez Sophie, April '19. Thanks Mike for this. Pours murky gold, sparse white bubbles atop. Acetic sharp funk on the nose. Taste has a calm acetic sour character, soft funk, fruity grape must, gentle sweetness. Perhaps lost a little zing over the years, but it still bears a very pleasurable sourness.

At a tasting, small quickly disapearing bubbly head, cloudy dried apricot orange color, spicy yeasty aroma with a hint of horse sweat, fruity flavor with a hint of horse sweat, almond and minerals, medium grape acidity. Really nice and enjoyable.
