We have brought wine and beer together!
We love wild yeasts and ingredients at the Wild Beer Co and frequently use locally foraged ingredients. We decided to team up with a nearby wine producer to create a beer with incredible locality and a truely wild character.
Grape must is discarded as a waste product at vinyards, only the juice is kept. However, this is where all the natural, wild yeasts are and we wanted to harness these unique bugs to sour bring them to beer. We used white grapes at the beggining of the fermentation to add sourness and then red grapes in the conditioning to add extra flavour and funk.
Using our proprietary Somerset yeast, captured in local cider orchards, and harnessing the wild yeasts and bacteria from English grapes, this beer's favour is rooted in its locallity.
With an assertive acidity, complex funk and bright pink colour, it's as unusual as it is delicious and in limited numbers - so get yours fast!

Lys brun klar med lavt hvitt skum. Lukter sitrus, sitron, drueskall, grapefrukt, honning og noe karamell. Skikkelig sur smak, sure bƦr, noe syrlige epler og drueskall. middels lang.

750 ml bottle. Pour a full amber with no head. Aromas of stoned fruit skins and grapes. Flavors follow same: nectarines and green grape. Tart and tingly.

Draft at In De Wildeman. Cloudy peach with a ring white head. Aroma is big lactic, grape skin, tart grape and vinegar. Flavour is heavy acidic. Medium bodied with light carbonation. Way too harsh sour. [13/08/2016]

750ml bottle. Pale amber colour with a short-lived white foam head and musty aroma. Taste is sour, tangy, grains, fruity, grape, vinegar. Slick mouthfeel, light to medium bodied, spritzy carbonation, dry sour finish. Quite OK.

Bottle 750ml. @ The Danish (Ulfborg) Ratebeer Summer Gathering 2016, TNO(U)DRBSG16 @ fonefan & Brugmasia House. [ As Wild Beer Squashed Grape ].Clear matt medium yellow orange color with a small to average, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, tart, grapes, medicine, solvent, band-aid, vinegar. Flavor is moderate sweet and light acidic - acetic with a average duration, tart, grapefruit, medicin - band-aid. Body is medium, texture is oily to watery, carbonation is soft to flat. [20160820]

Bottle@Danish Ratebeer Summer Gathering 2016 - Cloudy yellow white weird colour with no head. Aroma and taste is sour grape, vinegar, some burn, very strange weird acidic notes going on, very weird, just not getting on with this. Nasty.

TNOD(U)RBSG16. Hazy orange, a few white bubbles. Really weird aroma, some kind of plant or herb - unpleasant in a way. Flavour is perfumy, phenolic, even wirder than the aroma. Sour, acidic. Oh dear.
