We have brought wine and beer together!
We love wild yeasts and ingredients at the Wild Beer Co and frequently use locally foraged ingredients. We decided to team up with a nearby wine producer to create a beer with incredible locality and a truely wild character.
Grape must is discarded as a waste product at vinyards, only the juice is kept. However, this is where all the natural, wild yeasts are and we wanted to harness these unique bugs to sour bring them to beer. We used white grapes at the beggining of the fermentation to add sourness and then red grapes in the conditioning to add extra flavour and funk.
Using our proprietary Somerset yeast, captured in local cider orchards, and harnessing the wild yeasts and bacteria from English grapes, this beer's favour is rooted in its locallity.
With an assertive acidity, complex funk and bright pink colour, it's as unusual as it is delicious and in limited numbers - so get yours fast!

Sampled from bottle @ Danish Ratebeer Gathering 2016, Ulfborg, Day 2. Hazy pale yellow color, virtually no head. Aroma is milky sour, milk gone bad, way past its date yoghurt sourness. Taste is sour and acidic and not good at all. Undrinkable imo.

Bottle, 5%. Hazy yellow with small diminishing white head. Aroma is malt, chemical, soap, perfume and herbs. Flavour is malt, herbs, little chemical, soap, perfume, little sour, lemon, acid grapes and acetone.

Bottle @ Danish Ratebeer Summer Gathering, fonefan. Medium head with medium duration. Color is golden. Aroma and taste are grapefruit,lactose acid, brett, fruits, malt and hops. Sour finish. All acid.

Stark karbonisierter Antrunk. Stechend sauer, das Bier wirkt, als ob ein bereits recht saures Bier noch einmal infiziert worden wäre. Die Trauben wirken dabei hilflos und fehl am Platz, unsüffig, monoton. 8/7/6/6/9/6

Sampled from draft at Kimchi Festival 2016. Hazy golden with no head. Quite acidic, sour grain, hay, mild spices. Strong sour, slightly bitter. Under medium body. Low carbonation, acidic as hell otherwise quite nice.

Tap. Shakespeare’s, Sheffield. Hazy, dark, dusky pink. Big head that dissipates rapidly, leaving behind a halo of pink. Nose has rosé wine. Some white wine vinegar. Fruity grain. A bit fusty, sweet and damp. Taste is fairly sweet, with a lot of sharp acidity. Mouth cleansing, tooth melting acidity on the palate. Finishes much the same, with some residual, fusty grain sweetness. I did like this, but I’m glad I only had a third of it.

Bottle @ LIBF’16. Shared with the RB Belgian team. Léger orange-doré trouble, col fin blanc. Arôme au nez de raisin sur des effluves annonçant pas mal d’aigreur, Presque de vernis. Palais au profil suret très dominant raisin avec un fini proche d’une note vinaigre que je trouve trop devant au point d’en devenir trop dominant. Fini lactique en devient presque déplaisant.
