We have brought wine and beer together!
We love wild yeasts and ingredients at the Wild Beer Co and frequently use locally foraged ingredients. We decided to team up with a nearby wine producer to create a beer with incredible locality and a truely wild character.
Grape must is discarded as a waste product at vinyards, only the juice is kept. However, this is where all the natural, wild yeasts are and we wanted to harness these unique bugs to sour bring them to beer. We used white grapes at the beggining of the fermentation to add sourness and then red grapes in the conditioning to add extra flavour and funk.
Using our proprietary Somerset yeast, captured in local cider orchards, and harnessing the wild yeasts and bacteria from English grapes, this beer's favour is rooted in its locallity.
With an assertive acidity, complex funk and bright pink colour, it's as unusual as it is delicious and in limited numbers - so get yours fast!

Head gone in 1 sec flat. Pale, fully hazy golden-yellow beer. Sulphur, acetic acid, fruit. White wine than has been over-sulphated. Bit sulphury again in the flavour, hint at DMS, Mineral, lactic acid and a point of acetic. Sour, unripe grapes, grapekernels (I did not know about the must, but it was over-obvious). Tart, puckering, dry-out effect. Too harsh to be really great.

Tower 42 Tasting. Very hazy gold beer, tidy pale cream colour head. The nose warns - acetic and acid. Palate is light, semi dry and has decent fine carbonation. Taste unfortunately follows the nose. Lemon acid. Acetic burn. Some apple. Bleh!

Bottle shared on Level 42 9/3/16. Many thanks to Kenny for this one. Clouded pinky orange coloured pour with a small halo of white head. Aroma is sharp lemon, some acetic, grape fruit, jam, tangy. Flavour is comp[owed of tangy, acetic, slight burny, perfume, tangy, some fruits. Plastic on the nose one as well. Palate is tangy, sour, burny, high spritzy carbonation. Decent.

Bottle shared on the 42nd floor - thanks to Kenny. Pours hazy, grapefruit pink with a slim, foamy white head. Tart lemon in the nose, a little sweat. Light sweet flavor with assertive acidity, some dried berries, lemon juice. Light bodied with spritzy carbonation. Sharp acidity on the finish, more lemon, salty sweat, grape skins. Not bad.

Bottle split at the level 42 tasting, thanks to Kenny, 09/03/16. Hazed yellow with a reddish whisper topped with a moderate off white swirl. Nose is sharp acidic notes, lemon drizzle, pissy red wine barrel, funky. Taste comprises pissy lemon, wood must, well integrated acididty, funky, grape must, straw. Medium bodied, fine carbonation, semi drying close with rising acidity and a puckering conclusion. Ok sour ... a touch sharp in place.

5th Feb 2016: De Bierboom, Brugge. Shared from a bottle at the 4th International Beer Swap. Thanks whoever brought it. Hazy red orange pour, wispy head. Sour oranges that had gone off came to mind in the acidic flavour and aromas: not my thing, but scored objectively.

Keg at BD Soho. It pours cloudy amber with a pinkish hue and decent off-white head. The nose is dusty, funky, mouldy, red wine vinegar, acidic sting, damp leaves and earth. The taste is crisp, bitter, rather sour, good deal of acidity, musty, black grapes, red wine vinegar, lactic, tangy fruits, plenty of mouth - pucker, lemon and earth with a dry, somewhat acidic finish. Medium body and moderate carbonation. I like the idea, but my teeth enamel is getting ripped off. A bit rough. Almost, but not quite.
