This cider Cidre AOP Pays d'Auge is a non pasteurized and non gasified natural fermentation cider
AOP (Appellation d'Origine Protégée) is the european Protected Designation of Origin (AOC in France).

ELABORATION :
Our Cidre Pays d’Auge is made in the respect of traditional process making methods :
First the apple are picked up to the right maturation manually or mechanically / washed / crushed / the pulp is put into a vat open air to give the juice its colour and to release its aroma / the pulp is then pressed within an average productivity of 650 most liters per ton of apples / natural clarification of the most / slow alcoholic fermentation (1 to 4 months) / natural froth creation in the bottle (minimum 3 months).
After an analytical and organoleptic control made by the INAO (Institut National des Appellations d’Origine), the Appellation Cidre Pays d’Auge can be obtained.
Non pasteurized cider, natural fermentation in the bottle.
TASTING :
Looking : Clear. Golden with orangey gleams. Thin bubble.
Smelling: Ripe fruit flavour.
Tasting: Round and generous. Balance between sweetness and bitterness.
SERVING SUGGESTION :
The cider must be consumed fresh (between 8 and 10°C) and preferably in « ballon » or « tulipe » glasses.
- The young Pays d’Auge cider (from spring to autumn), being smooth and fruity, is the perfect accompaniment to fresh cream dishes and desserts, especially to apple desserts (norman pie, souflé normand...).
-The Pays d’Auge cider aged one year, being more powerful is the perfect accompaniment to white meat and some red meat (lamb chop, steaklet of duck...).
-Beyond one year and a half, Pays d’Auge cider can accompany norman cheese like Pont l’Evêque, Livarot or Camembert.
PRESERVATION :
In the bottle, the Pays d’Auge continues on fermenting (due to the yeasts).
With optimal preservation conditions (around 10°C and upright stocking), the Cidre Bouché Brut can be kept between 1 and 2 years.

Bottle. Clear golden. Soft funk, sweet apples, leathery, straw, horse blanket, dry apple peel. Medium sweet, light bitter. Medium bodied, medium dry and nice sparkly carbonation. Good one!

Cloudy dark blond color, small head with large bubbles. Intense aroma; apples, apple skins, wood. Mild residual sweetness, with a nice apple juice flavor, and a strong apple skin character, with strong tannic finish.
Maybe because I’ve been missing French ciders, but I find this to be excellent.

750mL bottle, pours a cloudy opaque golden yellow with a small white head. Aroma is quite funky, with barnyard funk, dusty bone dry apples, and champagne mustiness. Flavour is very funky and dry upfront, with tons of barnyard funk and champagne must upfront, ending on a lovely sweetness that blends beautifully with the funk. Just an excellent example of a session cider with tons of character. Excellent.

Bottle - Light funk and some apple. Clearish with a frothy white head. Bright and effervescent with some great apple and a touch of funk. Slight sweetness on the finish. Really nice.

Bottled. Sparkling hazy pale golden, coarse head. funky apple aroma. Dryish with light body and soft mouthfeel. Ripe apples, some figs and cobwebs. Mild and soothing with some depth.

Bottle 750ml.Clear light to medium yellow color with a small to average, initial fizzy, virtually none lacing, fully diminishing, white head. Aroma is moderate apple, old apples, wood, light vanilla. Flavor is moderate sweet and light light acidic with a average to long duration. Body is medium to light, texture is watery, carbonation is lively in my mouth, but looks very flat. [20110223]
