Oozlefinch & Old Ox got together in early March to try a new sour experiment, a pleasantly tart German Kolsch, soured with the Oozlefinch House Culture & fermented at 95 degrees with a unique Norwegian “kveik” yeast strain from our friends at Jasper Yeast. It just so happens that the yeast’s favorite temperature is also the temperature we use for souring, so we thought to ourselves, "Why has no one tried this?" We pitched the bacteria and the yeast at the same time and let it ferment hot, then gave it time to develop additional sourness. The result is a pear and lemony malt-forward ale that drinks clean like a lager with a mild sour finish. Of the 70+ beers we've made in the last year, this one is our owner Russel's, favorite!

Probably the only kolsch I've had that is sour and calls itself sour. The other sour kolsches were just likely a mess up of some other style so the brewers called it a kolsch. Doesn't mean it's particularly good but then come on - what were you expecting from a sour kolsch. Hazy golden pour with a pillow of head and great lacing. Tangy and astringent, barky. Tap at Whole foods.
