Heirloom is an open fermented barley and spelt beer made in concert with Jake Miller of Heirloom Rustic Ales of Tulsa, Oklahoma. The beer began in Spring 2021 as an interpretation of a beer of Jake's made in the style of Kolsch with a grist of german barley, spelt, and whole flower hops. After fermentation in tank the beer was moved to neutral barrels to finish fermentation on the saison culture in those barrels. The beer was refermented to condition in the bottle with young spelt beer.
