We were tasting barrels with him and thought it might be nice to blend one with Perry to balance the acidity. The blend had a nice pineapple character to it so Rob went to the store and bought a ton of pineapples. They were in the blend before we could stop him. The result is a delicious tart crusher. Emphasis on the tart.
Shortfinger has a still version of this. Ours is carbonated. Try them both!

(500ml bottle from the Revel webshop) Lightly hazed deep gold pour with a small white head that fades with spotty lace. Aroma is surprisingly vinous, white wine meets perry with just some sweeter undertones of pineapple, musky complex funk, some mixed pit fruit sweetness. Flavour is quite acidic and very pineapple-forward, an odd mix of the flavour of ripe pineapple with the tartness of unripe; there’s a touch of white wine vinegar about it, dusty yeast, light funk, lemon juice, some perry residual sweetness pops out as you adapt to the acidity, helping ‘dry’ the finish out a touch. Finish is still lactic tart though, with loads of fresh pineapple into the aftertaste. Light to medium bodied, slightly slick, quite softly carbonated. Unique stuff, I wasn't expecting a perry/saison to be the most acidic Revel bottling I've tried but there you have it. Rather enjoyable flavours though I'd have dialled the acid back a touch. Interestingly, pairing with oysters helped draw down the acidity and push pineapple forward.
