This single varietal Dolgo cider is made with the very first crop we pressed ourselves.

Dolgo is a crabapple with an incredible aroma, reminiscent of ripe fruit on a forest floor. Energizing acid and chalky apple tannins pull it all together.

We've loved the singular character of this variety for a very long time. In the past, we've never gotten enough of a crop to make it into a cider on its own because it's an important part of our mainstay: Time and Place.

On tap at Stillwell. Pours clear blonde with a white head. Musty apples and lots of funk on the nose; fairly earthy. Flavour has tart and musty apples, good funkiness. Great funk. This is an excellent cider.

(750ml 2019 bottle from the cidery webshop) Pours clear dark orange with a small white head and no lace. Aroma is an intense blast of ultra-ripe crabapple, juicy but with a dry, tart and tannic austerity to it as well, a bit lactic, clear mulchy funk overtones to this one too. Flavour is much drier than the nose would suggest, big bite of acid but it's crabapple acid with some lacto rather than acetic and the mouth adapts, again the crabapple flavour is big here, funk is restrained, solid tannic core, very mineral, long tannic finish with lingering floral accents. Light to medium body, slick, tannic grippy feel. Definitely not for the faint of apple heart with its aggressively tart and tannic Dolgo nature, but fun if you're into edgy ciders.
