This batch of Copestone started nearly two years ago - double mashed in the morning and boiled well into the night. The rich malt base forms a sturdy foundation with a caramelized sugar quality woven throughout - supported largely by multiple additions of Mauritian Dark Muscovado sugar. And as always, the layering of port and bourbon barrel characters becomes one of the defining qualities of the beer - on this point we’re quite proud of how far this beer has come. Six batches in, Copestone is absolutely dialed in. For us it tastes strikingly familiar (and memory triggering!) but evolved and refined.
