Notes of semi-sweet baking-type apples with some yeasty pie-like vibes, paired with an interesting array of bitter herbs and wildflowers that lend a certain cocktail-like vibe, also impressions of bitter citrus peels contributing a very light acidity. Finish is off dry and highly bitter with the adjuncts lingering on the tongue for a while. Medium bodied, oily and effectively flat. I felt like the bitter herb addition was very much to my liking but a drier cider with more effervescent carbonation would support them better. Maybe I should have let this one sit for a few months plus?
