(750ml bottle from L'Axe du Malt, Quebec City) Pours clear deep gold with a big but instantly fizzing out white head of loose champagne-type bubbles, some continuing regeneration. Notes of semi-sweet fresh summer apples, green and red with some moderate tannin, some cooked apple and sweet white grape accents, nice moderate Brett with some hay and light earth, giving a slightly dusty quality, nice long apple into the semi-sweet finish. Medium bodied, oily feel but with effervescent carbonation lifting it. No crazy bells and whistles, I tend to prefer a slightly drier cider but this is nicely made.
