(750ml bottle shared by Herbalist, thanks!) Massive gusher. Pours nearly clear pale yellow with a rapidly fading white head and ongoing bubbling. Notes of lightly tart apples fermented quite dry, though juicy up front, gooseberry, lime peel, soft white grape, fresh grass, barrel woodiness, hint of funk, quite vinous, bone dry finish is lightly yeasty, dry cider/sparkling wine vibe, bit of wood. Medium bodied, nice effervescent carbonation is edging towards methode traditionnelle. The grapes are more obvious on the nose and into the finish, but on the whole it feels like a dry sparkling wine - Prosecco or the like - with the apple component relatively stronger. Quite nice, good balance, no sign of booze.
