Using mixed fermentation, we targeted an ester profile that would reflect a traditional, uncontrolled fermentation.

Draught at St. Augustine’s, Vancouver
Hazy dark amber color with creamy head. Mild aroma of malt, caramel, fudge. Good body strength, malt flavor with a fudge side, a bit nutty; light esters in the final; the alcohol is a bit too evident.
Not an Old Ale, just a simple Strong Ale. A bit rough, but not bad. Would be ok in a small bottle, in front of the fireplace, with low expectations.
