A traditional Czech-style lager, Tmavé Speciální Pivos are dark brown and full-bodied, albeit with a light finish. We brewed our single-decocted iteration entirely with Weyermann floor-malted heirloom barleys — a base of Bohemian Pilsner Malt turned to the dark side with the introduction of Vienna, caramel, and chocolate grains. It received kettle additions of Michigan’s amplified Saaz hops for some light spice and cedar. And then we gave the liquid months to mellow (and naturally carbonate) in tank. The result is silky, 5.2%, and brimming with notes of cola, dark bread crust, cacao nib, and sun-dried coffee.
