But instead of pairing Citra with New Zealand’s Nelson Sauvin, we look across the Tasman Sea to Victoria and Tasmania, the growing region of Australia’s mighty Enigma cultivar. It’s been six long years since we’ve employed this beguiling hop and its eruptive white grape and raspberry character. We won’t wait that long again.
