Signal From Noise is a 6.9% Helles Bock. Also referred to as Maibock, this German lager style was historically released to greet the return of warm weather. It was a transitory beer, the bridge from winter’s rich, roasty dark brews to summer’s svelte pale lagers.

Our pale bock was brewer Rich Snyder’s first Ocelot recipe, constructed on a foundation of @EpiphanyCraftMalt’s Helles, Vienna, and Munich malts. This third batch combines our favorite elements of the previous two. Like the 2023 iteration, it features a hearty charge of Munich malt and a longer boil for a deepened malt character and fuller body.

But we’ve brought back the original hop trio for Signal From Noise’s kettle additions: Magnum early on, Tettnanger midway through, and finally Saphir at the tail end. These German varietals contribute a pleasant bitterness and present traditional noble spice, florality, and a hint of sweet citrus.

Brewed in early March and naturally carbonated, this deep golden lager has waited months to make your acquaintance. We think it pairs perfectly with a sunny May afternoon.

Raw barley grain, snappy and bitter. Some hint of roast in this. Dark copper pour without much head. Full bodied here. Great example of an uncommon style. Quite a bitter finish, more than many maibocks I've had. Tap at brewery.
