Indroducing Susurrus - a Farmhouse Ale with Sumac, Yarrow, Raspberries and Cherries. The wheels for this one were set in motion about this time last year when we foraged blossoming, native yarrow here on Music Vale Road. Our friends from @huntsbrookfarm generously provided Staghorn and European Sumacs picked as the berries ripened in late summer. The two make a beautiful pair - each with an ancient history producing tart, lemony teas and together forming a tangy, slightly herbal base. Following fermentation with our mixed culture and a period of foeder aging, the beer was transferred onto once-used cherries and raspberries, from Avalonia: Red, for a more subtle, second extraction. The result is a beer that is not only a reflection of the current season here in New England but suits it perfectly!
