Tripel Belgian-Style Ale Brewed with Rice and Thai Basil
Our Summer seasonal, Trade Winds Tripel is a Belgian-style Golden Ale with a Southeast Asian twist. Instead of using candi sugar (typical for such a beer), we use rice in the mash to lighten the body and increase the gravity, and spice with Thai Basil. The result is an aromatic, digestible and complex beer made for a lazy summer evening.

The Sampler, Brooklyn 750ml ($15): Pours slightly hazy golden with a large white head. Aroma is nice yeast, loads of fruitiness, some spice, but I certainly didn’t get the particular aroma of Thai Basil on my nose. Taste is really not all that different from a normal tripel. It is, perhaps, less sweet, but it doesn’t feel more Southeast Asian to me. This is not to say that I didn’t enjoy every sip of the beer, it is just to say that I enjoyed it more conventionally. Complex and well-balanced.

750 ml bottle. Pours cloudy yellow-orange with a good-sized cream-colored head with nice retention. Aroma is herbal, citrus powder drink, earthy. Taste is pretty exotic--I guess that’s what you get from a Thai basil-infused tripel. It’s sweet, savory and a little tart; lightly bitter in the finish. Tastes fruity, although I’d be hard-pressed to say which fruit it is I’m tasting. Slightly foamy mouthfeel, somewhat high carbonation, medium body. Nice beer.

A golden amber ale with a thick super thick off white head. In aroma, sweet honey mal with light spiced notes, basil, a bit oxidized. In mouth, a sweet candy sugar with light curacao, basil, a bit old. Tasted Feb. 24 2013.

Bottle, 75cl. An unclear, golden beer topped by a small, fluffy, off-white head. Some spiced notes in the else sugary and fruity aroma. Cinnamon, fruityness, white sugar and some pale malts in the flavor. Medium body, maybe a bit high on carbonation. Lasting finish. Overall, it’s too sweet and spiced, but it’s a fine beer anyway. 130202

From a 75 cl bottle shared at Canaan Valley. P{ours a hazy gold with a massive white head. Yeasty citrus nose. Notes of orange and apricot with a distinct basil flavor coming through. A quite decent tripel.
