Cantillon Chouke is a gueuze bottled by Cantillon in 37,5cl and 75cl bottles as well as 20L kegs. It consists of equal parts 1-, 2-, and 3-year old lambics with the entirety of the 2-year component being lambic aged in Armagnac barrels. It is listed as 5.5% ABV.
Chouke was blended in the winter of 2016. The 75cl bottles and 20L kegs are for on-site consumption at Les Brigittines restaurant, while the 37,5cl bottles are for on-site consumption at Pistolet Original, both in Brussels. Chouke was the first known lambic to be released from Cantillon that has a portion of lambic aged in Armagnac barrels. The word chouke in the Brussels dialect of French is an affectionate name given to someone special.

Bottle at Pistolet Original. Near clear golden orange with a white head. Aroma of lightly tart fruits, peach, apricot, citrus, caramel notes and a nice light funk. Flavour is above light sweet and sour with quite a bitterness to it. Medium bodied with soft carbonation.

Bottle at Pistolet Original Sablon. Slight hazy dark golden with good sized white head and lots of bubbles rising in the glass, might be because it’s greasy. Very fruity up front with apricot, some red apple, peach, mango, lots of white grapes and a bit of lemon. Soft caramel, oxidized malts, hay, soft funk. There’s some bitter fruit skins and herbs, with a flowery bitter finish. About medium sweet, sour and bitter. Strong medium bodied with sparkly carbonation. Wow a nice surprise, really enjoying this!

Bottle at pistolet - sablon. Pours amber. Aroma sour, fruity, funky. Flavor is sour, bitter, funk, fruits, apricots. Finish is dry bitter. Overall: not that different from the regular, maybe bit more bitter. From tap at BxlBeerFest. Kind of same as the bottle, but was less bitter than I remembered. Still don’t see much difference, maybe side by side with regular would help.

375 ml. bottle @ Pistolet Original. Nice walk getting there, cool looking place great design. Initial idea was to eat something here as well, quinoa salad seemed to the only clearly vegan thing & they were out of it, they were out of quite a few things. No bother, didn’t inquire further. Some items looks more than a bit expensive, service was very friendly. Very hot day, mildly cool inside, very lazy Saturday afternoon, this was the perfect beer at the perfect time. 1/3 etc. buildup initially sounded like a gimmick, this worked amazingly. Poured into a De La Senne glass. Bottled 15.12.2016. Sparkling darker orange, little head & it is quickly gone. Nose is mellow orange, there is some clear cellar funk here, adds perfect complexity to lively Cantillon funk, sourer than usual. Taste is perfect sparkling cellar, lively musty, orange peel, low vinegar here actually, perfectly lively, stupidly refreshing, massively drinkable, zest, mellow cellar, zest, very juicy, wonderful fruit,... Perfect really for me for the time, day,.... Complex, big juicy, complimentary sour, perfectly sour, everything just worked perfectly here, didn’t expect to love it so much more than their regular geuze but I adore it. Perfect beer experience for me. Everything that I could possible want, screw it gonna give it 5/5 [something about Jean Van Roy being against people rating Cantillon on ratebeer].

A dark golden color. Lots of tiny bubbles. 1 finger persistent head. This was bottled December 15th of 2016. Very young. The nose in the tumbler is weak. Very rotten egg and lemon custard. Not a lot of barrel or brandy. Letting it sit a while it starts tart and gueuze-like with a little sweet Faro nature. Finish is liquoer, brandy, reisling grapes, It’s a fantastic beer. I wish I could try it in 10 years

30/05/2017 - 37,5cl bottle @ Le Pistolet Original, Brussels. Clear yellow with small white head. Nose is gentle sour, wood, some lemon, hay. Taste starts sour, some wood, lemon, some green apple, High carbonation for a lambic. If really enjoyed it.

Bottle - Lemon rind and wet grass. Clear gold with a small white head. Wet grassy notes, hay and citrus brightness. Bone dry finish.

Bottlw at Pistolet. Cool, was told I was the first one to order it ! Pours clear blonde, strawyellow. Small white head. Smell is rich complexity, oak, apples, cantillom funk. Mild fruityness. Taste is sour, dry, oak, very full, hay notes, funky. Definately more malt forward than the regular gueuze. Nore accidic than the medium batch as well. Carbonation is good here, not to high, and a very agreeable mouthfeel. Not to dry. I like it
