Cantillon Chouke is a gueuze bottled by Cantillon in 37,5cl and 75cl bottles as well as 20L kegs. It consists of equal parts 1-, 2-, and 3-year old lambics with the entirety of the 2-year component being lambic aged in Armagnac barrels. It is listed as 5.5% ABV.

Chouke was blended in the winter of 2016. The 75cl bottles and 20L kegs are for on-site consumption at Les Brigittines restaurant, while the 37,5cl bottles are for on-site consumption at Pistolet Original, both in Brussels. Chouke was the first known lambic to be released from Cantillon that has a portion of lambic aged in Armagnac barrels. The word chouke in the Brussels dialect of French is an affectionate name given to someone special.

Sampled from 375ml bottle at Pistolet Brussels. A almost clear golden beer with a mid-sized most good lasting white head. Aroma of tart grapes, riped apples, riped yellow fruits. Taste of tart grassy fruits, herbs, some vinegar and grapes, apples, nice.

Bottle at Pistolet Original. Hazy orange with a medium white head. Kind of soft and not that sour with citrus, some funk and light pepper. Also some oak. A refreshing one.

750ml bottle at Les Brigittines, Brussels. It pours clearish golden - amber with a medium white head. The aroma is fresh, clean, soft oak, vanilla, hay, funk, pear, melon, toffee apple, cracker and a touch of citrus peel. The taste is crisp, dry, tart, bit funky, actually quite mellow and clean, green apple skin, pear skin, grape must, oak, pithy lemon, hay, touch of chamomile and a touch of spice with a drying finish. Medium body and fine, foamy carbonation. Subtle, yet has a great depth of flavour. Incredibly soft and well balanced. Love it!

Bottle at Pistolet Original, Sablon - Brussels. Pours clear gold with a small, creamy white head. Nice snout, mellow grass, melon. Great balance. Lightly sweet, with restrained acidity, soft funky wood, more grass, a little lemon. Light bodied with massaging carbonation. Quite clean on the finish, some further grassy notes, more lemon, soft but quenching acidity. Excellent.

Clear warm golden colour, white head. Aroma of wood, funk, apricot, cognac notes. Light sour flavour, gooseberries, apricot, apple, wood. Dusty lemon finish. Nice but feels a bit young imho.

Bouteille 37.5cl, Bottled 15/12/2016 @ Pistolet. Dorée/léger orange, col blanc-cassé épais. Arôme au nez tenant le bouquet typique de Cantillon, funk avec de fines notes boisées, qcq pointes vertes fruitées, petit rétro citronné, effet de grenier. Palais est sec, funk, pas mal de notes de lambic et je retrouve bien le côté Cantillon, petite note sèche, finement acidulée et funk, retrouve une certaine fraicheur fleurie et fruitée relevée un peu par la bonne effervescence de fin de bouche. Impression de groseille verte, raisin et encore de ce fini citrique de levure sauvage.

Special and limited blend of Cantillon lambics, made with an unusual proportion of 1/3 one year, 1/3 two year and 1/3 three year old lambic, the second of which is the armagnac barrel aged lambic I tasted the same day at BXL Beerfest. This bottled Chouke is made exclusively for a few eating houses in the city of Brussels; this rating is for a 37.5 cl bottle consumed at Pistolet Original in the Sablon neighborhood. Off-white, medium thick, fluffy head, stable on the edges but dissolving in the middle, warm ’old gold’ robe with bright golden hue, teeming with visible, very champagne-like sparkling. Aroma indeed has more ’noble’ and restrained characteristics of old lambic than the regular geuze: impressions of unripe gooseberry, old cloth, dusty cellar, old socks, fermenting hay, grape peel, lemon zest, hay stacks, raw rhubarb, old bread crust, sorrel leaves, dried field flowers, wet wood. Crisp and sour onset as is to be expected from any traditional lambic, but less puckering acidic than average for a blended Cantillon, rhubarb-like sourness nevertheless outspoken and very drying, unripe stonefruit, spritzy cava-like carbonation consisting of very fierce, but tiny bubbles and in that sense not coarsening the mouthfeel at all - as it ought to be in any good geuze. Wheaty, lightly bread crust-like malt underground, smooth and a tad vinous from the higher proportion of old lambic, ongoing drying lactic tartness, lots of Brett effects in the finish, hayish, leathery and very noble, just the subtlest hint at that armagnac-aged component, old cloth and dusty attic impressions lingering, rural, rustic and utterly quenching. Extremely refreshing, refined and noble, not as sharp and funky as the regular geuze due to the higher share of old, vinous, graciously aged lambic - this is a true gem and one of the most elegant geuzes I had so far, even if the armagnac part is a bit lost in the whole. Absolutely worth the short walk from central station to Pistolet - or a visit to Brigittines for a 75 cl bottling, of course. Hopefully this will be continued!

From tap. Pours hazy orange with a small white head. Aroma is bretty, slight earthy. Fruity. Mild sourish. Light sweet. Wooden into a bretty and slight dry finish. Mellow and light fruity finish.

Semi-hazy golden pour with a very short-lived head. Really mellow barnyard funk, wet hay, macerated apples, unripe apricots, sulphur and minerals. Medium body, almost flat, with a funky bitter-sweet and medium sour finish. With a lot less carbonation than the normal geuze blend, more mellow and wine-like, but still crisp and refreshing, in the traditional geuze style.
