Cantillon Chouke is a gueuze bottled by Cantillon in 37,5cl and 75cl bottles as well as 20L kegs. It consists of equal parts 1-, 2-, and 3-year old lambics with the entirety of the 2-year component being lambic aged in Armagnac barrels. It is listed as 5.5% ABV.

Chouke was blended in the winter of 2016. The 75cl bottles and 20L kegs are for on-site consumption at Les Brigittines restaurant, while the 37,5cl bottles are for on-site consumption at Pistolet Original, both in Brussels. Chouke was the first known lambic to be released from Cantillon that has a portion of lambic aged in Armagnac barrels. The word chouke in the Brussels dialect of French is an affectionate name given to someone special.

Keg at Les Brigittines, Brussels. Light unclear golden color with off white head. Yeasty and light malty aroma, funky, mineral, citrus, floral. Light sweet and moderate acidic taste. Light thin to oily body with soft to average carbonation.

Fein säuerlicher, intensiv holziger Beginn. Schnell trocken werdend, fein bitter, rund. Holzig herb, fein würzig, die Säure bleibt rund. Vollmundig, mittellanger Nachhall. Gut. 10/10/9/10/10/10

Bottle at Sablon. Hazy orange color with creamy white head. Aroma is very cheesy, leathery, lemon rind, wood, dusty and moldy cellar. Taste is cheese, hay, lemon rind again, but also a very strong red apple character, mushrooms, unripe berries. Some armagnac character there in the back, but probably I'm just imagining that. Silky mouthfeel with medium carbonation. Bone dry finish that is slightly metallic. Very good and complex Geuze, just the slightly metallic finish is a point of critique.

(375ml bottle at Pistolet Original Galeries, Apr 28/18) Pours lightly hazy medium gold with loose head of big white bubbles that faded rapidly. Aroma of apples, particularly green, green grapes, fruit skins, soft brandy/spirit, wet wood, earthy and slightly mulchy funk, light citrus zest, touches of grass. Flavours of lightly tart and lightly sweet green apples, green grapes, soft citrus, wood, light vanilla, light earthy funk, wet hay, tannins, an impression of Calvados, some lactic edge to it mid-sip before drying quite a lot in the finish, lots of wood and dry grass, grapes, a bit of a brandy quality with a slight illusion of spirit heat. Medium mouthfeel, slight slickness, very soft carbonation. Alongside the hints of the armagnac, there's a soft rounded smoothness to this that puts it well above the typical Cantillon gueuze in my personal book. Extremely drinkable but interesting.

Bottle at Pistolet Original Sablon. Golden with a small white head. Funky aroma with nice fruity notes. Sweetish and tart fruity and funky flavour. Very soft and smooth for a Cantillon.

03-03-18 // 375ml bottle at Pistolet Original Sablon. Almost clear orange golden. Funky nose. Taste is sweet grauny with a dry acidity. Barnyard yeasty. Minimum fruity touch. Dry tart finish.

Bottle at Pistolet Original. Clear deep golden color white head. Aroma of dusty stonefruit skins. Taste has funk, dust, hints of summer fruit. Delicious.

37.5cl bottle @ Pistolet Sablon. Fruity mild nose. The beer starts smooth an funky. Wood, horse blanket, intense. Deep intense sourness, woody green apples, winey fruity. Very deep and intense blend. Astringent in the end, fantastic.
