Cantillon Chouke is a gueuze bottled by Cantillon in 37,5cl and 75cl bottles as well as 20L kegs. It consists of equal parts 1-, 2-, and 3-year old lambics with the entirety of the 2-year component being lambic aged in Armagnac barrels. It is listed as 5.5% ABV.
Chouke was blended in the winter of 2016. The 75cl bottles and 20L kegs are for on-site consumption at Les Brigittines restaurant, while the 37,5cl bottles are for on-site consumption at Pistolet Original, both in Brussels. Chouke was the first known lambic to be released from Cantillon that has a portion of lambic aged in Armagnac barrels. The word chouke in the Brussels dialect of French is an affectionate name given to someone special.

Nice slightly bubbly-creamy mediumlasting head, slightly cloudy. Aroma is slightly dry sour-ish moldy, old moldy barrels, old cellar, sorrel, old rope, hay, grass, minerals, fruit stones, flowers, old dusty hops, berry skin. Taste is slightly dry sour-ish mineraly, sorrel, old rope, oak, grass, fruit stones, hay, flowers, old citrus peel, minerals, berry skin, unripe berries, citrus. Medium bitterness, slightly dry sour-ish fruity mouthfeel, soft carbonation. Fair enough due to the moldy aroma. Very drinkable though...

Bottle shared at Pistolet Originale Sablon. Pours clear golden with white head. Sour grean, sweet malt, elderflower funk character, gooseberry, dried fruits, grape most and deeper armagnac notes, nutmeg, wild horse sweat, light iron, rusty, dry wood and wine tannins. Moderate sweet, medium sour, medium bitter. Medium body and soft carbonation.

Bottle at Pistolet, Brussels, 08/12/18. Very lightly hazed golden orange with a decent off white cap that dissipates to a swirl. Nose is lemon rind, funk, wood must, dusty mellow citric shreds, light green apple. Taste comprises tangy lemon, dry rot, hint floral, funk, dusty wood, mellow acidity, damp straw, apple core, basement notes. Medium bodied, fine carbonation, semi drying close with a mellow acidic bimble. Decent enough lambic but fell short if what I'd hoped for.

Bottle shared at pistolet. A light hazed golden orange coloured pour with a heading white head. Aroma is funky, light vinegar, green fruit, mould, green apple. Flavour is composed of sharp green apple, lemon rind, citrus, licks of vinegar, green Jolly rancher, mellow mouldy funk. Palate is sharp, acidic, highish carbonation.. Lingering lime juice. Fun.

0,375l from bottle at Pistolet Original. Yellow clear color, small white head. Smells a butt ciderish, earthy, green apples, light wood, some funk. Nice subtle smell. Medium body, soft carbonation, slick mouthfeel. Tastes funky, earthy, citric, cheesy, blue cheesy, wood, light green apples, bit grassy. Finishes lightly dry and lightly sour with notes of earth, citrus and nice funky/cheesy notes. Very nice one, nice funk. Feels a bit heavy overall, but still very good to drink. Overall very nice beer

F: big, off-white, average retention. C: shiny gold, light hazy. A: bretty, spicy, funky, fruity, sour apricot, bit herbal, yeasty, cellar dusty. T: bit sour fruity, bretty, cellar, bit puckering but not very sour, leather, citrus, green apples, bready, funky, woody, bit oily mouthfeel, bit more on the malty side for the style, easy drinkable, fully enjoyed,375ml bottle (bottled 12/06/18) @ Pistolet Original (Sablon).

750ml bottle. Les Brigittines, Brussels. Honey gold. Light haze. Thick, white foam, that stays the course. Nose has dessert apple. Raw honey. Cheese rind funk. Some old, leathery oak. Taste has a light, funky sweetness, but mostly this is oaky, apple tart. Dry and tart on the palate. Low acidity. Foamy carbonation. Woody, funky, bretty finish, with that dessert apple running throughout. Very nice.
