To celebrate FIVE YEARS we present Ash, an oak-aged saison with raspberries, hazelnuts, and foraged White Oregon Truffles from the southern Cascades of Washington.

It’s no secret that we’re all about PNW ingredients and Ash celebrates the many producers in Washington that we’ve worked with over the years. Brewed with Washington malt from LINC Malt, raspberries from Sidhu Farms via Farmstand Local Foods, and Holmquist Hazelnut Orchards.

Ash presents big raspberry jam notes with underlying earthy and nutty aromas courtesy of the truffles. Ash is tart with nostalgic visions of cherry warheads and watermelon hard candy. There’s also a hint of vanilla and oak as the beer warms up in your glass.

On tap at Fair Isle, pours a cloudy bright red with a small white head. Aroma is loaded with intense, tart raspberries and wild bugs — can’t say I pick up on the hazelnuts or truffles. Flavour is tart, moderately acidic, and extremely fruity, with intense, moderately puckering raspberries that meld well with the wild yeast. Again, I don’t get the nuts or truffles, but it’s a damn fine fruited saison.
