The second act of this two-part release beckons us to a darker realm. Enter the Dark Saison, also aged in the highly coveted Weller Bourbon (ex-Cabernet) barrels. It is here that this brew undergoes a most wondrous transformation resulting in a deep, rich brown color with a crown of off-white foam. Complex notes unfold — raisins and cranberries, brown sugar and cinnamon, toffee and whiskey — all dancing harmoniously upon the palate. Candied dates and chocolate intermingle, with the oak imparting a lingering warmth. The slight sweetness reveals itself in the finish, akin to a robust red wine. Truly, this is a performance fit for the closing of the curtain!

Bottle at the DCBeer bottle share. Poured a dark ruby, red-wine color with a small ecru head. Aroma was light tartness, sweet raisins and malts. Sweet finish with some dryness. Not a lot of saison notes on the aroma, but the dryness comes through on the finish.
