The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

Food pairing: dark chocolate mousse with Rochefort 10 and tonka beans, prepared by yours truly.

Clear reddish brown beer, practically no head. Aroma: spicy, dry, oxidized, earthy, dusty, cardboard, sourish impression, earthy, oxidized. MF: ok carbon, medium body. Taste: dry, a bit sourish, spicy, oxidized, dusty, cardboard, not great. Aftertaste: bitter touch, sourish, a little fruity, dried fruits, a bit watery in the finish. At age 10, the youngest Rochefort magnum of the tasting, but hasn’t aged the best, alas. Oh well.

Food pairing: blue cheese (Fourme d’Ambert), toasted raisin and walnut bread, sour cherry compote with star anise, all prepared by yours truly.

Clear reddish brown beer, practically no head. Aroma: a bit oxidized, leathery, dry dusty impression, some cardboard, earthy. MF: lively carbon, medium body. Taste: a bit sweet, nice, earthy, caramel, some milk chocolate, a little hoppy, dry touch. Aftertaste: bitter notes, dry, hint of caramel, a bit spicy, milk chocolate, slightly sweet, soft acidity, nice stuff!

Food pairing: corn tacos, pulled boar stewed in quadruppel, blue red cabbage salad, chipotle and lime mayo, all prepared by yours truly.

Alas this bottle had a wet cork under the crown cap...
A little cloudy dark brown beer, small creamy beige head, unstable, non adhesive. Aroma: nice, a bit earthy, soft roast, a bit oxidized, cardboard, dried fruits, dusty, spicy, coriander. MF: ok carbon, medium body. Taste: a little sweet, earthy, some caramel, dried fruits, oxidized, orange peel, spicy touch. Aftertaste: spicy, oxidized, earthy, good stuff, a bit dry, some almonds, honey. Not the best, but still fairly decent.

Food pairing: pasta alla crema di zucca, with muscat squash, hokaido squash and butternut, nduja infused olive oil, parmigiano, scallions and pumpkin skin chips, all prepared by yours truly.

Clear reddish brown beer, practically no head. Aroma: pretty oxidized, earthy, tobacco, some cardboard, dusty, a little spicy. MF: ok carbon, medium to full body. Taste: nice, pretty sweet, earthy, some caramel, soft roast, dry, chocolate, bitter, spicy, nice! Aftertaste: dry, earthy, tobacco, some caramel, milk chocolate, little bitter, more oxidation, malty finish, lovely beer! This one has aged very gracefully!

Food pairing: seared sous-vide duck breast, soy sauce, pomegranate molasses, pearl couscous with pomegranate, toasted almond slivers and preserved lemons, grilled sweet potato with toum sauce, all prepared by yours truly.

Clear reddish brown beer, practically no head. Aroma: caramel, malty, dried fruits, raisins, sweet impression. MF: ok carbon, medium to full body. Taste: good roast, a little sweet, malty, caramel, a little bitter, nice stuff! Almost no oxidation in this beer!

Food pairing: deer paté with armagnac, ginger bread with dried figs, caramel mustard seeds, Belgian endives and kriek confit, prepared by yours truly.

Clear reddish brown beer, practically no head. Aroma: oxidized, honey, malty, earthy, nice, good smell! MF: ok carbon, medium body. Taste: soft roast, lots of dried fruits, malty, some chocolate, a little bit of cardboard, a bit oxidized, dry, dates, lovely! Aftertaste: bitter, a bit hoppy even (?), malty, good roast, dry finish.

Bottle at Hops, Crewe (with appropriate glass). Pours a dark ruby with minimal tan head. Malts are the mainstay of the aroma, but the dried fruit, sugar and herbal hints make it so much more interesting. There’s a slight sharpness in the mouth, with again malts to the fore but outshone by their companions. Plenty of treacle, cake, figs and molasses leading to a slightly dry and boozy finish. This is excellent – it hides its strength well.
