For Scratch #470 Petite Lager, we aimed for a lower ABV with nuanced flavors. Starting with a simple grain bill of pilsner malt, we incorporated flaked corn to lend a subtle sweetness while keeping the body crisp and dry. We fermented with Mexican lager yeast and added fresh wort near the end of fermentation, a process called Krausening. This secondary fermentation imparts subtle fruity esters to the smooth malt backbone and adds natural carbonation. A round of light dry-hopping with Saaz and Citra lends notes of lemon rind and bright citrus atop the pale malt flavors. It’s tiny and tasty at the same time
