We’ll probably harp on about it until we’re red in the face; our DDH Pales are probably the most underrated tool in our brewing arsenal. Intentionally brewed to replicate the bolder, brasher bigger beers in our lineup, we really dig how we’re able to bring that full mouthfeel and hop intensity of a DIPA, but at a more sensible Pale Ale kinda strength. Time Gone By is our latest effort in the long lore of the Polly’s DDH Pale story; featuring an all killer, no filler dry hop lineup of 30kg of Citra, 10kg of Simcoe, 5kg of Galaxy, and a final flourish of 2kg of Idaho 7, this beer positively bursts with the typical Polly’s flavour checklist. Expect to find juicy tropical fruits, lime and grapefruit up front, before a second wave of peach, apricot, and gooseberries, with just a whisper of pine needles for balance.

Can at Ebenezers, Crewe. Pours a murky grapefruit with a small off-white head and good lacing. The aroma is not unattractive, but is mainly boiled cabbage with a little grapefruit. In the mouth it has mushy ripe fruit and apples to the fore but with some underlying delicate bitterness of floral hops. Finish is fruity and slightly dry. Much nicer than it looks.
